Slipper Lobster Ceviche, RM39

A classic recipe from Peru that Chef Toni Valero reinterprets using local produce such as lobster from Johor and calamansi from Cameron Highlands. Perfect as an appetiser.

Prawn Carpaccio, RM38

The deconstructed Sarawak Laksa- Prawn Carpaccio is seasoned with the oil from the laksa, salt and pepper and calamansi zest that is sprinkled on top of the prawns. Paired with the house made prawn crackers and laksa stock that is skillfully transformed into ‘caviar’ form.

Confit Mushroom, RM23

This is one of our favourite dishes! The king mushrooms is grilled in a charcoal oven, then a layer of milk skin is added together with free-range egg, dry black trumpet mushrooms and pine nuts. Mix it all together before you dig in. Suitable for vegetarians too.
