Prep 10 mins plus freezing Makes 12
1 litre vanilla-bean frozen yoghurt, softened
125g Orchard Gold premium mixed berries, plus extra to serve
250g shortbread, broken into large chunks
1/2 cup desiccated coconut, toasted
1 lime, finely grated, plus extra to serve
Toasted coconut flakes, to serve
1. Line a 12-hole (1/3 cup) muffin tray with paper patty cases.
2. In a large bowl, combine all ingredients. Spoon evenly into cases. Freeze at least 4 hours, until set.
3. Serve topped with coconut flakes, extra raspberries and lime zest.
TIP: Take the ice-creams out of the freezer at least 5 minutes before serving.
